Mexican Bean Salad

Here is one of many healthy recipes to come!  Not only does it provide lots of fiber and healthy fats, but it is also super easy to prepare and is full of flavour!

Ingredients

½ Red pepper

½ Yellow pepper

2 stalks of Celery

½ small Red onion, finely chopped

1 tin Black beans

1 tin Chick peas

1 tin Corn

½ Punnett Cherry tomatoes, cut in half

Fresh Coriander

1 Chilli (to taste)

1 clove garlic, crushed

1 tsp ground cumin

20ml lime juice

10ml white vinegar

15ml olive oil

Method

Combine all the ingredients together, and store up to 24 hours in an air-tight container.
