Hummus

Ingredients

400g can of chickpeas (reserve the liquid)

2 Tbsp tahini

2 garlic cloves, crushed

1 tsp ground cumin

pinch of salt

2 Tbsp freshly squeezed lemon juice (more if desired)

6 Tbsp olive oil (plus more to drizzle over when serving)

1 tsp paprika (optional)

 

Method

Drain the chickpeas and tip into the blender / food processor.  Add the tahini, crushed garlic, cumin, salt, lemon juice and 4 Tbsp of the reserved liquid from the can.  Turn on the food processor and slowly add oil while it is running, until it is fully combined and smooth.

Taste and add extra lemon juice / salt / cumin to your preference.

Add to your serving dish, sprinkle some paprika and drizzle olive oil over the top.  Serve and enjoy!

Store in an air-tight container in the fridge.
