Protein Crumpets

Ingredients

1 egg

1 banana

½ cup rolled oats

½ cup milk of choice

1 tsp baking powder

1 tbsp chia seeds

1 tbsp cocoa powder

Instructions

  • Blend ingredients together in a food processor / blender.
  • Heat a pan on medium heat with a teaspoon of oil.
  • Pour or scoop the batter onto the pan (about ¼ cup each) and cook until bubbles start forming / browned on the one side. Then flip over until brown on the other side
  • Enjoy with peanut butter, fruit, yoghurt, nuts etc.
